Ingredients
- 1 Original or Whole Wheat Pita Bread
- 2 eggs. scrambled
- 1 cup baby spinach, wilted
- 1/2 tomato, diced
- 3/4 cup shredded mozzarella cheese
This simple and flavorful Breakfast Pita Pizza recipe is perfect start to your day! Great for the whole family and kid-friendly! Use either Joseph’s Original Pita for a classic taste or Joseph’s Whole Wheat Pita for a healthy alternative.
Directions
- Pre-heat oven to 375 degrees.
- Crack both eggs into small mixing bowl, whisking until there are no egg streaks. Salt and pepper to season.
- On stove, pour eggs into pre-heated pan, mixing until softly scrambled.
- Add baby spinach to eggs and mix until fully wilted. Remove from heat.
- Place pita flat on counter, add half of cheese to pita. Add egg and spinach mixture on top. Add diced tomatoes and sprinkle remaining cheese on top.
- Baked in oven for 5 to 8 minutes, until pita is fully crisped.
