Ingredients

  • 1 Original or Whole Wheat Pita Bread
  • 2 eggs. scrambled
  • 1 cup baby spinach, wilted
  • 1/2 tomato, diced
  • 3/4 cup shredded mozzarella cheese

This simple and flavorful Breakfast Pita Pizza recipe is perfect start to your day! Great for the whole family and kid-friendly! Use either Joseph’s Original Pita for a classic taste or Joseph’s Whole Wheat Pita for a healthy alternative.

Directions

  1. Pre-heat oven to 375 degrees.
  2. Crack both eggs into small mixing bowl, whisking until there are no egg streaks. Salt and pepper to season.
  3. On stove, pour eggs into pre-heated pan, mixing until softly scrambled.
  4. Add baby spinach to eggs and mix until fully wilted. Remove from heat.
  5. Place pita flat on counter, add half of cheese to pita. Add egg and spinach mixture on top. Add diced tomatoes and sprinkle remaining cheese on top.
  6. Baked in oven for 5 to 8 minutes, until pita is fully crisped.
  7. Enjoy!
